Chardonnay I.G.P. Trevenezie

Chardonnay I.G.P. is produced respecting tradition but according to process innovation. The goal is to enhance the raw material with choices that do not alter the high aromatic potential.

The grapes are harvested early in the morning to protect them from oxidation and then are pressed in our cellar. This step ensures the production of top quality must through subsequent flotation to eliminate any impurity.

In the next phase, special heat-conditioned steel tanks are used for the product conversation, and the selected yeasts are added for alcoholic fermentation.

The fermentation of Chardonnay I.G.P. lasts about twenty days, with the must at a constant temperature of 16 ° C. In the next phase, storage can last from four or six months, depending on the quality of the noble lees.

In the last phase, the batonage takes place: this step determines some peculiar characteristics, including the persistence on the palate typical of Chardonnay. The final step is bottling and storing at rest for two months before being placed on the market.
