Tai I.G.P. Trevenezie

Tai is a Venetian vine, one of the Italian excellences with particular reference to the North East. Known for its still white wine characteristics, it took this name from a decision of the European Community to give it greater specificity.

As for the vinification and ageing of this award-winning wine, the grapes are harvested early in the morning to maintain the quality and aromatic potential intact. Afterwards, the grapes are pressed softly and carefully to protect against oxidation. After a flotation aimed at separating the clear must from impurities, it is placed in temperature-controlled steel tanks in addition to the fermentation foot, composed of selected yeasts, sugars, and base must to allow the start of alcoholic fermentation.
"The fermentation continues for a time ranging from 22 to 25 days at a constant temperature of 14-15 ° C.

After fermentation, the wine is stocked in steel tanks for at least two months in contact with the noble lees where, by proceeding with frequent batonnage, it acquires a fatter feel and intensity on the palate. Once the optimal state of ripeness is obtained, a light clarification is carried out and, finally, filtration for bottling. Once bottled, the wine rests for at least two months before being launched on the market."
