Pinot Grigio D.O.C Venezia
Each bottle of Pinot Grigio is bottled with dedication according to tradition and offers a typical and unmistakable flavour. The success of this wine dates back to the time of the Venetian Republic and continues to the present day giving life to an area where almost half of the Pinot Grigio vine is grown nationwide.
The grapes are harvested in the morning to avoid losing quality and aromatic potential of this special grape variety.
Maceration is carried out in steel tanks for 12 or 24 hours, depending on the vintage.
The pressing is soft, and the must is subjected to a strict qualitative selection. After this, it is stored in thermo-conditioned tanks, where the alcoholic fermentation process takes place with the help of carefully selected yeasts. This phase lasts between twenty and twenty five days at a constant temperature between 14 and 15 degrees. Storage for at least four months follows.
The production involves a further assurance phase based on an optimal state of ripeness, up to a slight clarification and filtration before bottling. Once bottled, the grey wine is left to rest for two months before being put on the market.
